Dragees ( pronounced dra-zhay) are pastilles of fine chocolate or dry fruits delicately covered with a sugar shell. Also known as Jordan almonds, confetti or sugared chocolates, Dragees are one of the oldest sweets in Europe. The making of a Dragee is a very slow, meticulous process requiring constant attention. Each chocolate is layered with liquefied sugar for several days.
While today’s Dragees are partially produced with machines that recall the gentle motion of hand manufacture, the process will always require the involvement of skillful artisans. Chocolate Dragees are made with our famous Belgian chocolate and come in a wide range of more than fifty colors with a choice of three finishes: Mat, Shiny or Pearly.
